Greek Yogurt and Pudding Cannoli Recipe

Greek Yogurt has become quite the staple in our household. It’s so versatile and can be used in so many recipes. It can replace a variety of ingredients to provide a healthier alternative, too.

It has lower calories, less fat, higher protein, and less sugar than a lot of frequently used ingredients. Post contains affiliate links.

Shelley told me about this recipe for Cannolis using Greek Yogurt and Pistachio flavored pudding. During my last trip to Mariano’s in Frankfort, I found some mini-cannoli shells so I decided to try it out.

Before anyone goes crazy on me, I am not saying this is a healthy recipe… just that the Greek Yogurt makes it healthier than typical cannoli ingredients.

Cannolis with Greek Yogurt and Pudding Filling

There are only four ingredients, so that’s pretty sweet.

  • 1 cup Greek Yogurt – I used Fage 0% plain
  • 3 tbs Sugar-free Instant Pudding – I used Pistachio
  • Mini Cannoli Shells
  • Mini Chocolate Chips

I used a shooter for the filling at first. Not thinking, I mixed the chips into the pudding mixture and that clogged the shooter – DUH. So, only the first couple cannolis got the neat, precise filling that the shooter provides! The others I just used a knife to spread and fill the shells.

Everyone loved them and thought they were delicious. Personally, I did not love the pistachio flavor. I plan to make them again using vanilla or maybe even cheesecake flavored pudding. Also, I would like to try mixing in a little cottage cheese or low fat cream cheese to make them taste a little bit more like a traditional cannoli.

I only filled 5 shells, so with the extra filling I dropped blobs onto wax paper and froze them for some frozen yogurt bites – also my clever sister’s idea. 😉

A yummy treat to fill cannolis with Greek yogurt and pudding mix.

Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • 1 cup Greek yogurt, I use Fage 0%
  • 3 tbs Sugar-free pistachio instant pudding
  • 5 Mini cannoli shells
  • 1/4 cup Mini chocolate chips

Instructions

  1. Mix yogurt and pudding well.
  2. Add mini chips to your taste (if using a shooter, do this after!).
  3. Fill cannoli shells.
  4. Chill for a bit before serving.

2018 update: So, have you ever gone on a diet where you restrict your sugar to the point of changing your tastebuds? I think that’s where I was at when I made these. When you go on a super low-sugar diet, everything gets a lot sweeter.

When you deprive yourself of sweets and then eat something like this, it tastes like heaven. Now that I am on no special diet whatsoever, these cannolis are not as flavorful. I just wanted to mention that. My body is used to sweets and sugar now.

Bottom line is that these cannolis taste a lot better when you are sugar deprived! Keep that in mind. 🙂
