Cinnamon Muffins with a Mini Mixer

Not only to take my new mini KitchenAid Mixer for a spin, but I’ve also been craving a light and tasty muffin.

The muffins are a basic recipe but turned out well, so I’ll leave the recipe below.

Testing out my new mini mixer with a cinnamon muffins recipe

Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 egg
  • 1/2 cup milk
  • 1/3 cup butter

Instructions

  1. Add all dry ingredients to a bowl and stir.
  2. Beat the egg in your stand mixer before adding the rest of the wet ingredients.
  3. Mix the dry ingredients into the wet to combine.
  4. Bake at 400 degrees for 15 minutes.

Cinnamon Muffins

This batch made 10 muffins in a standard cupcake tray.

It’s a great base recipe to eat plain or add any sort of chips or nuts into.

I would typically add cinnamon chips or chocolate chips, but I was craving plain.

I got to make the same batch of muffins I would normally make in this mixer, so no downsizing necessary for the tiny beast of a mixer.

I want to try this recipe for cinnamon muffins. I am lucky to have enough counter space in my new hoe, but it was hard to get out and out away the kitchen mixer in the past.

This mini mixer would be ideal for my grandmother! She is almost ninety and still loves making cakes but a regular size mixer is too heavy for her to move around!
