Simple Salmon Recipe

We typically eat some sort of fish 2-3 times a week. My favorite way to prepare it is using our indoor grill. I buy enormous whole fish at Costco, portion it out and freeze it because I find it’s more affordable this way. Plus, I like always having some on hand for a quick and healthy meal. I can prepare this fresh OR FROZEN in just 10 minutes!

I use:

2-3 6oz salmon fillets (fresh or frozen)
1 tbsp lemon juice
1 tsp garlic powder
1/2 tsp cayenne pepper
boil in bag brown rice
any of your favorite veggies (fresh or frozen)

Prepare the rice and veggies as directed. Then simply spritz, brush or drizzle the lemon juice over the fillets and add the seasonings. Throw them on your grill–fresh fillets are done in about 4 minutes and frozen take about 6-8.
