Despite my many cookbook reviews, the meals I REALLY like are EASY to make meals. Some people enjoy their time in the kitchen; I really like a quick and easy process to make a meal. Enter the new cookbook from Camilla Saulsbury and Robert Rose publishing, 250 Best Meals in a Mug – easy, quick meals in a mug cooked in your microwave!
250 Best Meals in a Mug
My husband works a weird schedule, leaving me alone for many of my evening meals. The 250 Best Meals in a Mug recipe book makes for easy solo dining. It contains convenient, budget friendly meals, and are especially nice for a dorm, office or when traveling. From desserts, to soups, to pancakes or fondue, there are tons of options for any meal of the day.
I decided to try both a quick meal and a cookie – most of the ingredients were already in my kitchen, but I went with safe recipes, I might have to be more adventurous when I can make it to the store. I made myself a mac and cheese recipe with REAL cheese instead of the powdered cheese that I usually end up making it with. There are also quick alterations that are listed on each recipe. I added salsa as suggested to make a tex-mex version of the mac and cheese. I also made a shortbread cookie, but used brown sugar as suggested in the recipe alterations, it turned out funny looking, but super yummy (I think I had a little too much liquid somehow).
If you are looking for quick meals (on your own), or even a fun way to help your kiddos create their own recipes in a mug – check out the 250 Best Meals in a Mug. Even recipes like Mac and Cheese are easy, and so much healthier than their boxed store bought counterparts.
