Halloween Butternut Squash Bat Soup

Tasty butternut squash soup dressed up for Halloween! Great for all season, but add the bats for Halloween.

Ingredients: For the soup: – Extra virgin olive oil – Onion – Garlic – Butternut squash – Chicken broth – Cream cheese – Salt – Pepper

Ingredients: For the pasta bats: – Bowtie pasta – Water – Black food coloring

In a dutch oven, heat the olive oil over medium-high heat. Sauté the onion in the heated oil and cook until tender and transparent. Add the garlic and cook for one additional minute.

Add the butternut squash and the chicken broth. Cover and simmer for 25 minutes or until the squash is tender.

Allow the soup to cool before puréeing in a blender or a food processor.

Return the soup to the pan and heat.

Add the cream cheese, salt, and pepper and stir until fully incorporated.

Time to make the pasta bats! Prepare the pasta as per the box directions. Rinse the pasta under water to cool, then place it in a large ziplock bag.

Add black food coloring and move the pasta around until it is fully coated. Allow it to sit for 5 minutes. Place the dyed pasta in a strainer and rinse until the water runs clear.

Create the eyes with leftover cream cheese and peppercorns or pasta pieces for the pupils.

Place the pasta bats on top of the soup before serving. Serve with warm crusty bread!
