Marry Me Chicken Recipe

Ingredients: – Avocado oil – Chicken breast – Salt – Pepper – Basil – Dried thyme – Crushed red peppers – Garlic – Chicken broth – Heavy cream – Sun-dried tomatoes – Parmesan cheese

Preheat your oven to 375 degrees Fahrenheit.

In a small bowl, combine salt, pepper, basil, thyme, and crushed red pepper. Season both sides of the chicken breasts with the mixture.

Heat oil in a large cast iron skillet over medium heat. Cook the chicken for 3-4 minutes on each side, then transfer it to a plate and set it aside.

Add minced garlic to the hot skillet and cook until fragrant. Pour in chicken stock to deglaze the pan and scrape off any brown bits stuck to the skillet.

Then add heavy cream, parmesan cheese, and chopped sun-dried tomatoes. 

Stir to combine and allow the sauce to come to a low simmer.

Add the chicken breasts back into the skillet and spoon a little sauce over the chicken.

Place the skillet in the preheated oven and bake for 15-18 minutes or until the chicken is cooked to 165 degrees F.

Serve the chicken warm over a bed of pasta, or with a side of rice or mashed potatoes. Enjoy!

Use cauliflower rice to keep it low-carb if you choose.
