Mmm, lime cookies. Not the first flavor most of us reach for, but definitely a unique treat! Using yellow cake mix and a box of lime gelatin, you can make these soft and chewy lime cookies whenever a limey craving strikes.
These citrusy green cookies are perfect for St. Patrick’s Day, the holiday season, or all throughout spring. So, basically, all year!
– Yellow cake mix – Lime gelatin – Butter – Cream cheese – Egg – White chocolate chip
Preheat your oven to 325 degrees F and prepare a baking sheet by lining it with parchment paper or lightly greasing it with nonstick spray.
In a large mixing bowl, combine the gluten-free cake mix, lime gelatin mix, softened butter, softened cream cheese, and egg.
Use a hand mixer on medium speed to blend the ingredients until a smooth and cohesive dough forms.
Use a measuring tablespoon to scoop out the dough and roll it into small balls. Place the dough balls onto the prepared baking sheet, leaving a few inches of space in between each one.
To flatten the dough balls, you can use the palm of your hand or the bottom of a flat glass. Gently press down on each ball until it forms a round disc.
