For the cookies: – Butter or shortening – Sugar – Carrots – Eggs – Vanilla extract – Orange zest – All-purpose flour – Salt – Baking Powder

For the icing: – Orange juice – Powdered sugar – Orange zest

Beat the shortening or butter and sugar with a mixer until crumbly.

Add the carrots, egg, vanilla extract, and orange zest to the mixture and beat until well mixed.

Gradually add in sifted flour, salt, and baking powder and mix well.

Drop spoonfuls onto your cookie sheets. Depending on the size of your scoops, you will have 2 to 3 dozen cookies.

The dough is too soft for a cookie scoop. Bake for 15 minutes or until golden.
