At first thought you may think these carrot cookies are Halloween or Easter cookies. Well, indeed they can be, but they are also delicious as breakfast cookies. They even have an orange juice glaze making them perfect for a breakfast or brunch treat.

These cookies make me think of hidden veggie recipes that many parents look for. I’m not 100% sure if they qualify, but eating carrots in the form of a cookie could be much more enticing for some! I mean, I genuinely like carrots, and I’d still prefer a cookie. 😉

  • Butter or shortening
  • Sugar
  • Carrots
  • Egg
  • Vanilla extract
  • Orange zest
  • All-purpose flour
  • Salt
  • Baking Powder

Carrot Cookies Directions

Preheat your oven to 350 degrees F and prepare two baking sheets.

Butter and flour in a mixing bowl.

Beat the shortening or butter and sugar with a mixer until crumbly.

Carrots, flour, butter, and egg in a mixing bowl.

Add the carrots, egg, vanilla extract, and orange zest to the mixture and beat until well mixed.

  • 2/3 cup Shortening or Softened Butter
  • 3/4 cup Sugar
  • 1 cup Carrots, cooked and mashed
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Orange Zest
  • 2 cups All Purpose Flour
  • 1/4 teaspoon Salt
  • 2 teaspoons Baking Powder

Glaze

  • 1/4 cup Hot Orange Juice
  • 2 cups Powdered Sugar
  • Zest of 1 large or 2 small oranges, less 1 teaspoon used in cookie dough.

Instructions

  1. Preheat oven to 350 degrees F.
  2. With a mixer, beat shortening and sugar until crumbly.
  3. Add carrots, egg, vanilla, and orange zest to sugar mixture and beat until well mixed.
  4. Sift flour, salt, and baking powder and gradually add to dough, mixing well.
  5. Drop by spoonfuls onto cookie sheet.
  6. Bake 15 minutes until golden.
  7. Make glaze while cookies are cooling by combining hot orange juice and powdered sugar. Stir until all lumps are smooth, then stir in zest.
  8. Drizzle glaze on top of cooled cookies.
  9. Optional: lightly sprinkle with additional orange zest for garnish.

Notes

This cookie dough is too soft for a cookie scoop. It works better if you drop from a spoon.
