Set your oven to 375℉ and prepare an 8x8” baking dish with nonstick cooking spray or butter.
In a large mixing bowl, combine oats, cinnamon, allspice, nutmeg, baking powder, salt, milk, applesauce, maple syrup, and vanilla extract. Stir in three-fourths cup of diced apple.

Pour the mixture into the prepared baking dish and top with the remaining diced apple and chopped pecans.

Bake the oatmeal bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
Allow the oatmeal bake to cool for 10 minutes before slicing and serving. Enjoy!
Notes
If you prefer your baked goods to be on the sweeter side, you can increase the maple syrup in this recipe to one-third cup, or drizzle a little extra on top when serving warm.
Keep in mind that this recipe will firm up as it sits, making it perfect for meal prep. Assemble and bake the day before, and slice and store in the refrigerator for a quick breakfast bar or lunchtime snack.
To add some extra flavor and texture, try topping your oatmeal bake with thinly sliced apples, a sprinkle of cinnamon, and some chopped pecans.
Any leftovers can be stored in the refrigerator, covered with plastic wrap, for up to four days. Enjoy!
