Combine flour and sugar in a bowl and mix well. Add butter and use a pastry blender to cut butter into the flour and sugar until the mixture is crumbly. Add water for dough to come together with a spoon. Remove from the bowl with your hands and knead a few times until dough is smooth.
1 ¼ cup flour, ¼ cup sugar, ½ cup butter, 2 tbsp water
Divide dough into four equal rounds. Color each round a separate color (rose, violet, black and royal blue). For the violet, I added rose color to make it more red purple vs blue purple.

Once all the dough is colored, divide it into four equal parts. Mix together one of each of the colors and pat together. Use a rolling pin, dusted with a little bit of flour to roll the colors together, about 1/2" thick. Don't use too much flour because it will not allow the colors to sick together or the dough to stick to itself. Roll up the dough. Gently roll the dough on a hard surface until you have a long tube about the diameter of an uncooked hot dog. Wrap in wax paper.
Repeat until you have 4 tubes. Freeze for 20 minutes.
Preheat oven to 325℉ and line a baking sheet with parchment paper. Remove cookie tubes from the freezer and remove the wax paper. Slice the cookies into 1/4" pieces and dip a portion of the cookie into sugar sprinkles and place onto prepared baking sheet, keeping about 1" apart.

Bake for 12-14 minutes or until the bottoms just begin to brown. Remove from oven and let stand to cool completely until ready to serve.
Notes
Use Wilton sugar sprinkles for the best results, as they have a shinier coating and produce a more vibrant effect.
It's recommended to use gloves when mixing the colors, as it can get messy and difficult to achieve the desired effect if you stir with a spoon.
