These Pumpkin Pie Cake Bites are cute, bite-sized treats that bring the flavor of pumpkin pie with the texture of cake pops. Shaped like mini pie slices and dipped in candy melts, they’re perfect for Thanksgiving or all of pumpkin season!
Cool the cake completely, then crumble it into small pieces. Add the frosting to the crumbled cake and mix with a spatula or hand mixer until it forms a dough-like texture. Use a 1-inch cookie scoop to scoop out dough, then shape each piece into a small triangle (pie slice). Repeat until you have 20 bites.

Melt the orange and white melting wafers in 30-second intervals, stirring between each, until smooth. Reserve 1 tablespoon of white wafers for the whipped cream topping. Dip each cake bite into the orange chocolate, then place on a silicone mat or parchment paper to set.

Mix the orange and brown food coloring on a small plate, adjusting with white if needed for a crust color. Use a small paintbrush to add the crust detail to each bite.

Melt the reserved white chocolate and spoon a tiny dollop on top of each bite for whipped cream. Add nonpareils if desired.

Refrigerate the bites for 30 minutes to set, then serve and enjoy!
Notes
Avoid heating chocolate for more than 2 minutes total. Add 1 tsp of vegetable oil if it’s too thick.
Store in an airtight container in the fridge for 3-4 days.
