Preheat oven to 300℉ and line 2 baking sheets with parchment paper. Grease parchment paper with nonstick cooking spray.
Add almonds, walnuts, and peanuts to a large bowl and mix well. Fold in raisins.

In a separate small bowl, mix together sugar, pumpkin pie spice, and salt.

In a small bowl, beat egg whites and water until foamy, about 3 minutes. Add egg whites to nut mixture and stir well to evenly coat. Add sugar mixture and stir well to coat nuts completely.

Spread nuts in a single layer (or as best as you can) on 2 prepared baking sheets. Bake for 40-50 minutes, flipping every 15 minutes until nuts are dry. Let set to cool completely before serving.
