Wash apples and place them on a cutting board. Cut the apples into quarters and slice into very thin pieces. Arrange the pieces on a plate in a spiral pattern.

Combine 3 tablespoons miniature semi-sweet chocolate chips with 1 teaspoon coconut oil in a small, microwave-safe bowl and microwave in 15-second intervals until the chocolate has melted, stirring after every 15 seconds. Set aside.

Microwave the peanut butter in a small microwave-safe bowl for 20-30 seconds or until it has melted.

Drizzle the melted chocolate, melted peanut butter, and honey in a circular pattern over the nachos.

Sprinkle the remaining 2 tablespoons of semi-sweet chocolate chips, shredded coconut, and pumpkin seeds on top of the slices.
2 tbsp shredded coconut, 1 ½ tbsp pumpkin seeds
Lightly dust the cinnamon over the nachos.

Notes
Feel free to substitute any of the toppings. Other options include: White chocolate chips, caramel drizzle, crushed candy bar pieces, etc.
Add a bit of lemon juice to the slices to keep them from browning.
Be careful not to burn the peanut butter while heating to melt.
