Preheat oven to 400℉ and line a baking pan with parchment paper or spray with nonstick cooking spray. Set aside.
In a bowl, add green beans and potatoes. Drizzle with olive oil and mix well. Spread into prepared pan and season with salt and pepper.
¾ lb green beans, 6 red potatoes, 3 tbsp olive oil, salt and pepper
In a small bowl, add honey, garlic, and ginger and mix well. Place tenderloin rounds onto sheet pan and place a spoonful of honey sauce onto each tenderloin.
¼ cup honey, 2 tsp garlic, ½ tsp ground ginger, 1 lb pork tenderloin
Bake, uncovered, for 15-20 minutes or until pork is no longer pink in the center.
Serve immediately.
Notes
==> You can use just about any potato for this, just cut it into 1/2″ pieces or the potatoes won't be done at the same time as the rest of the food.==> Pork Tenderloin usually comes in 2 small pieces. I use 1 of them for this recipe.==> Pro Tip: spray your measuring cup with cooking spray before adding the honey and the honey slides right out.
