Orange Carrot Cookies with Glaze
A soft cookie that's not too sweet. Carrot cookies with an orange juice glaze.

Glaze

cup
orange juice
hot

cup
powdered sugar
Zest of 1 large or 2 small oranges
less 1 teaspoon used in cookie dough.
Instructions
Preheat oven to 350℉.
With a mixer, beat butter and sugar until crumbly.
⅔ cup butter,
¾ cup sugar
Add carrots, egg, vanilla, and orange zest to sugar mixture and beat until well mixed.
1 cup carrot,
1 egg,
1 tsp vanilla extract,
1 tsp Orange Zest
Sift flour, salt, and baking powder and gradually add to dough, mixing well.
2 cup flour,
¼ tsp salt,
2 tsp baking powder
Drop by spoonfuls onto cookie sheet.
Bake 15 minutes until golden.
Make glaze while cookies are cooling by combining hot orange juice and powdered sugar. Stir until all lumps are smooth, then stir in zest.
¼ cup orange juice,
2 cup powdered sugar,
Zest of 1 large or 2 small oranges
Drizzle glaze on top of cooled cookies.
Optional: lightly sprinkle with additional orange zest for garnish.

This cookie dough is too soft for a cookie scoop. It works better if you drop from a spoon.
