Natural flavors are defined in the United States under FDA Regulation 21 CFR 101.22. Here’s where things get interesting. The FDA defines “natural flavors” as chemical flavor compounds extracted directly from plants, animals or plant and animal products as found in nature. Notice the word “animals” in there? Yeah, that’s going to matter in a moment.

In the U.S., natural flavors can be derived from a much broader range of sources including fruits, vegetables, dairy, meat, seafood, and fermentation products, and a strawberry-flavored product may contain little or no actual strawberry, as long as the components come from natural sources. The label doesn’t have to disclose whether the natural flavor comes from a fruit, a spice, a dairy product, or even an animal extract. So that raspberry yogurt you’re enjoying? Could be flavored with something completely unrelated to raspberries.

Manufacturing processes for declaring flavors as natural have minimal restrictions, and chemical transformation of natural flavors using inorganic catalysts still fulfills the US natural flavor requirement. Let’s be real here – that doesn’t sound very “natural” at all, does it? The public imagines natural flavors as crushed berries and vanilla beans, not laboratory chemical reactions with catalysts.

When you take a natural flavor off the shelf to incorporate it into your product, that flavor is contained in some kind of solvent, with certain additives for functionality, and the solvent and additives are not required to be in any way natural. Flavors are complex mixtures that sometimes comprise more than 100 chemicals, and in addition to flavors themselves, these mixtures contain chemicals that have other functions, with solvents, emulsifiers, flavor modifiers and preservatives often making up 80 to 90 percent of the mixture.

According to an Environmental Working Group analysis, almost 99 percent of new food chemicals introduced in the U.S. since the year 2000 have entered the market via the GRAS loophole, and when GRAS flavor substances are listed as natural flavor or artificial flavor, only the manufacturer knows what chemicals are present in food. This means countless untested compounds are slipping into our food supply without proper oversight.

If a product is labeled as natural strawberry flavor in the EU, at least 95% of the flavoring components must come from strawberries. The EU mandates that natural flavors be produced solely through traditional food preparation processes, such as heating, cooking, cutting, grinding, pressing, distillation, recrystallization, solvent extraction, enzymatic processes, and fermentation, while synthetic and inorganic catalysts are prohibited.

American regulations are far more lenient by comparison. In the EU, if flavoring comes from a mix of sources, companies must call it natural flavoring with other natural flavorings, whereas in the U.S., a strawberry-flavored product may contain little or no actual strawberry, as long as the components come from natural sources. Sometimes artificial might actually be the more ethical choice environmentally speaking.
