Cute Elf Bites Mini Holiday Shortbread Cookies
These adorable little shortbread cookies, which we shall call Elf Bites, are the perfect addition to your holiday baking lineup. They’re tiny, Christmasy, and are a cute treat for elves while Santa enjoys his cookies.

We just can’t get enough of mini cookies. These Elf Bites are the perfect example of why. They are simple to make, fun to share, and perfect for so many magical holiday moments. Kids can add them to Santa’s Christmas Eve treat tray as a gift to the elves.

Just simple ingredients
Directions
Preheat your oven to 325°F. Line a baking sheet with parchment paper and set it aside.
In a bowl, combine the flour and sugar. Add the cold butter and use a pastry blender to cut the butter into the mixture until it becomes crumbly.
Gently fold in the nonpareils.
Add water to the dough and toss it gently. Knead the mixture with your hands until it forms a smooth dough.
Roll the dough out on a lightly floured surface to about 1/4-inch thick. Use a pastry cutter or pizza cutter to cut the dough into small 1/2-inch triangles.
Place the cookies on the prepared baking sheet, leaving a little space between each one.
Bake for 12 to 14 minutes, or until the bottoms of the cookies are just starting to turn golden. Remove the cookies from the oven and let them cool completely before serving.
