Gingerbread Trifle Notes and FAQ’s

I have too much cake for the trifle bowl.

Depending on the size of your trifle dish, you might have too much cake. After so many trifles, this is still something that’s never consistent for us. For this one, we made one cake round and then 12 cupcakes with the remaining batter. You can also use leftover cupcakes that you break into pieces.

What kind of gingerbread cookies should you use?

The gingerbread cookies you see here are Pepperidge Farms Ginger Family cookies. Feel free to make your own gingerbread cookies, or use whatever you like. Using the whole family of cookies is cute on the top. Don’t overthink it when you are crushing them though. :/

Can I make a gingerbread trifle the day before?

I do not recommend making this gingerbread trifle the day before because the cookies will get soggy. You can make the cake, pudding, and get the cookies ready beforehand so you can quickly layer the trifle the day of if that helps.

Which pudding should I use in a gingerbread trifle?

The pudding used here is vanilla, but white chocolate pudding will look nice if you don’t love the yellow color. It’s been hard to find white chocolate pudding lately, but might be worth seeking out if that’s the color you prefer in your trifle.
