Tofu Pudding Recipe Kid Approved
Desserts are tough when it comes to kids, but this healthy pudding recipe is something that makes us all happy. It is a good source of protein, antioxidants and has a low-glycemic index—meaning it won’t throw off your blood sugar. It is also Vegan, and Gluten-free!
Healthier Pudding Recipe
You’ll need (for the basic chocolate flavor):
19 ounces of Tofu – You can use pretty much any kind, but I found that soft or firm has the best consistency; and I’m partial to the Trader’s Joes brand.
2 Tbsp raw cacao powder – Navitas Naturals is a great one. The quality and flavor is excellent.
3-4 Tbsp agave syrup – I use Xagave organic white and blue raw agave nectar with fiber and calcium; made by betterbody foods
1-2 Tbsp coconut milk, you can also use almond milk
1/4 tsp salt
Simply blend all these ingredients together and chill until ready to serve! Or, experiment by adding other ingredients like fruits, extracts or whatever your imagination craves!
I experimented with several variations and the kids and I found that adding 1 tablespoon of PB2 and half a banana was by far the best. We dipped our PB Thins into the pudding and it was delicious! If you’re not familiar with PB2, prepare yourself for the best thing since… I don’t even know… everything and anything awesome! (“Sliced bread” just doesn’t seem to give the awesomeness of this stuff justice.)

This has a low-glycemic index, and is a healthy and delicious snack or dessert for the whole family. It can be tweaked to your liking by adding in other favorite ingredients.

- Coffee
- Shaved 100% Cacao
- Vanilla Extract
I made these successful flavor combos:
- PB-Nana by adding 1 Tbsp of PB2 and half a banana
- Mocha: Add 2 Tbsp coffee instead of the coconut milk and shave some 100% Cacao as a garnish
