Turkey a la king is our family’s favorite way to use up leftover turkey. If the question is what to do with leftover turkey? The answer in our household is make turkey a la king.

Gram’s Favorite Way to Serve Leftover Turkey

Thanksgiving is usually the holiday where we find ourselves with a lot of turkey. Christmas typically includes a smaller turkey and a ham.

So, that leaves one time of year for turkey leftovers. Everyone makes sure to leave my Gram with plenty of leftover turkey to make her legendary turkey a la king served on baked potatoes.

My grandma, who we lovingly call Gram, never uses a written recipe, so my Aunt Carla finally wrote it down for all of us. 

There are so many ways to enjoy turkey leftovers, but turkey a la king is most definitely my favorite. My Grandma made it throughout my childhood, and it brings back cozy memories every time I eat it.

Other people tend to scrunch their nose when I say we eat turkey a la king on top of baked potatoes. I guess it’s typically served over rice or bread.

Not to discriminate against any carb, I’m sure it’s tasty no matter what. However, I do suggest you give baked potatoes a try.

As a child, I always snuck some additional butter on my potato before topping it. I also chomped into a stick of butter as a kid, so maybe we shouldn’t take advice from child me. ;P

What is Turkey a la King?

Typically chicken, served a la king means diced in a cream sauce, and often with sherry, mushrooms, and vegetables, served over rice, pasta, or bread.

Instead of chicken, we use turkey. Clearly, our family switches it up by using turkey instead of chicken and swaps the bread for potatoes.

Ingredients
  

  • cup butter
  • 2 tbsp green peppers finely chopped
  • cup flour
  • 1 tsp salt
  • tsp pepper
  • 1 ¼ cup chicken broth
  • 1 ¼ cup milk
  • 3 cup turkey cooked
  • 4 oz pimentos 1 jar, not drained
  • 6.5 oz mushrooms sliced, 1 can, drained
  • 2 tbsp dry sherry
  • 4 potatoes baked

Instructions
 

  • In a saucepan, heat the butter and green peppers on medium, until butter is melted and for about an additional 2-3 minutes.
    ⅓ cup butter, 2 tbsp green peppers
  • Cook the broth and milk over medium-low heat, stirring constantly just until thick and bubbly.
    1 ¼ cup chicken broth, 1 ¼ cup milk
  • Add the rest of the ingredients and warm it up.
    ⅓ cup flour, 1 tsp salt, ⅛ tsp pepper, 3 cup turkey, 4 oz pimentos, 6.5 oz mushrooms, 2 tbsp dry sherry
  • Poke holes in potatoes, place on a plate, and microwave for 10-14 minutes.
    4 potatoes
  • Serve turkey a la king mixture over hot baked potatoes.

Notes

Many people serve turkey a la king over rice or toast instead of baked potatoes. See which you prefer. 
You can also use leftover chicken instead of turkey.
