Ingredients
  

  • ½ lb ground sausage
  • ¼ cup white onion diced
  • 1 tsp garlic minced
  • ½ cup red pepper chopped
  • 1 cup hash browns frozen
  • 3 tbsp oil
  • 6 egg beaten
  • 1 cup spinach chopped, fresh
  • 1 cup cheddar cheese shredded
  • ¼ cup cheddar cheese shredded
  • salt and pepper to taste

Instructions
 

  • In a large skillet, add sausage, onion, and garlic and heat until sausage is brown and onion is translucent.
    ½ lb ground sausage, ¼ cup white onion, 1 tsp garlic
  • Add red pepper, potatoes, and oil and heat until red pepper is tender.
    ½ cup red pepper, 1 cup hash browns, 3 tbsp oil
  • Add eggs and mix well.
    6 egg
  • Stir in spinach and 1 cup cheese.
    1 cup spinach, 1 cup cheddar cheese
  • Heat until eggs are set, stirring occasionally to scramble eggs.
  • The last minute or two, add remaining cheese to melt on top.
    ¼ cup cheddar cheese
  • Season with salt and pepper before serving.
