It seems I never have enough time in the morning to make a good hearty breakfast, which bummers me out because I know how important eating a good breakfast is. That’s why my Simple Country Breakfast Casserole is such an awesome dish – you prep it the night before, which makes my mornings “Simple”!
~ Simple Country Breakfast Casserole ~
Make your mornings simple with a Simple Country Breakfast Casserole Recipe!


What you’ll need:
3- cups frozen shredded hash browns
1 & 1/2- cups shredded cheese (I use Colby Jack)
1- cup ham cubed or diced (bacon or sausage is yummy also!)
1/2 cup diced green onions (have also made with sweet onions as well)
4 eggs
12 oz can evaporated milk
salt and pepper to taste
butter (for greasing baking dish)
(diced tomatoes or salsa can be used also!)
serves 6

The day before prep: Grease a 2 quart baking dish. Evenly layer the hash browns on the bottom, then cheese, ham, and green onions (in that order)

Whisk together eggs, evaporated milk, salt, & pepper..

and pour evenly over layers. Top with more shredded cheese and cover with foil or plastic wrap and place in the fridge overnight. (this allows for the hash browns to soak up the liquids and all the flavors to mesh)

The next morning pre-heat over to 350F , uncover and bake for 45 mins or until golden brown and an inserted knife comes out clean. (if cheese is browning faster than middle is cooking, cover with foil for last 15 mins) Remove from oven and let cool for 5-10 mins.

Cut and serve! Everyone loves this casserole, serve with a side of salsa or a sprinkle of your favorite hot sauce!

This is a GREAT recipe. It;s simple and looks like it makes a hearty breakfast! How is it reheated? I think the full batch is too much for my family, but if it reheats well then we could use it the next day too!
