As an adult, the more green in our diet the better. I still don’t know that many people who make a special request for pea soup, but it’s a good recipe to make a couple of times per year.

Split Pea Soup with Sausage Recipe

Split pea soup recipe with sausage

A split pea soup recipe where no ham bone is required. It includes sausage for a great flavor. 

Prep Time 30 minutes
Cook Time 2 hours
Total Time 2 hours 30 minutes

Ingredients

  • 1/2 lb sausage, ground
  • 1 cup celery, chopped
  • 1/2 cup onions, diced
  • 16 oz split peas, 1 lb, dry
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup carrots, chopped
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 1/2 teaspoon pepper
  • 2 bay leaves

Instructions

  1. Place sausage, onions and celery in a large stock pot and heat on medium to brown sausage. 
  2. Add split peas, broth, water, carrots and spices. Heat on medium-high heat until boiling. 
  3. Reduce heat to simmer and cover, 2 hours. Stir occasionally. 
  4. Remove bay leaves and discard before serving.

Split pea soup is one of my faves. I always make it with ham instead of sausage, tho. I can't wait to try this new variation!

For a lighter taste, try steaming & pureeing 1 pound of petite baby peas ( usually frozen) and adding them to the recipe above. I think it adds depth of flavor.
